Smoked Elote

Elote or "Mexican Street Corn" is new to us, but looked delicious!  So we made up a simple recipe and of course....had to put it on the grill!  Give it a try and let us know what you think!

 

Ingredients:

2 (15.5 ounce) cans whole kernel corn, drained
4 tablespoons mayonnaise, or to taste
4 tablespoons grated Parmesan cheese, or to taste
2 teaspoons chile-lime seasoning, or more to taste
2 teaspoons Fire In The Hole Spicy seasoning
1 lime, or more to taste

Directions: 

Prepare grill for direct grilling 

Heat corn in a cast iron skillet over medium heat until steaming, about 5 minutes. Remove from heat and drain water.

optional add some smoke flavor by smoking the corn for a bit before finishing

Fill several cups or mugs halfway with the corn. Add 1 tablespoon mayonnaise, 1 tablespoon Parmesan cheese, and 1 to 2 teaspoons each of chile-lime seasoning and Fire In The Hole to each cup. Squeeze lime juice on top.

Enjoy with your favorite beverage
