
Smoked Corned Beef with Guinness Glaze

Ingredients:
1 (3 lb) pre-packaged corned beef brisket (flat or point)
1 bottle (12 oz) Guinness Stout

1 tbsp black pepper
1 tbsp garlic powder
1 tbsp yellow mustard (binder)
For the Guinness Glaze:
½ cup Guinness Stout
2 tbsp Dijon mustard
2 tbsp unsalted butter
1 tbsp apple cider vinegar
1 tbsp Worcestershire sauce
Instructions:
1. Prep the Corned Beef
Rinse & Pat Dry: Corned beef comes packed in a salty brine. Rinse it under cold water and pat it dry with paper towels.
Trim Fat (Optional): If there's excessive fat, trim it down to about ¼ inch.
Season: Rub the brisket with yellow mustard as a binder, then coat with All Ration seasoning (or Memphis rub), black pepper, and garlic powder.
2. Smoke It
Set Up the Smoker: Preheat to 250°F, using a mix of oak and cherry wood (or whatever you have—budget-friendly is key!).
Place the Corned Beef: Set it directly on the grates, fat side up.
Spritz Every Hour: Lightly spray with Guinness or water to keep it moist.
Smoke Until 165°F Internal: This will take about 3-4 hours.
3. Wrap & Braise in Guinness
Pan & Pour: Place the corned beef in an aluminum pan. Pour ½ bottle (6 oz) of Guinness over it. Cover with foil.
Back in the Smoker: Continue cooking at 250°F until it reaches 200-205°F internal (about 2-3 more hours).
4. Make the Guinness Glaze
In a small saucepan, combine ½ cup Guinness, Dijon mustard, butter, vinegar, and Worcestershire sauce.
Simmer until thickened (about 5 minutes).
5. Rest & Slice
Let the corned beef rest 30 minutes, then slice against the grain for the most tender texture.
Brush with the Guinness glaze before serving.
