Smoked Cheesy Potatoes

Ingredients:

  • 4 large russet potatoes, peeled and thinly sliced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded smoked Gouda cheese
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 2 tablespoons butter, melted
  • Salt and pepper to taste
  • Chopped fresh chives or green onions for garnish (optional)

Instructions:

  1. Prepare the Smoker:

    • Preheat your smoker to 225°F (107°C) using your preferred wood chips for smoking. Aim for a mild wood like apple or cherry for a balanced flavor.

  2. Prepare the Potatoes:

    • Peel the potatoes and thinly slice them into rounds, about 1/8 inch thick. Rinse the sliced potatoes under cold water to remove excess starch, then pat them dry with paper towels.

     

  3. Assemble the Layers:

    • In a bowl, mix together the shredded cheddar, mozzarella, and smoked Gouda cheeses. Set aside a handful of the cheese mixture for topping.
    • In a separate bowl, combine the heavy cream, minced garlic, melted butter, salt, and pepper.
    • Grease a disposable aluminum foil pan or a cast-iron skillet. Arrange a layer of sliced potatoes on the bottom of the pan. Sprinkle a portion of the cheese mixture over the potatoes. Repeat the layers until all potatoes and cheese are used, finishing with a layer of cheese on top.

  4. Smoke the Potatoes:

    • Pour the cream mixture evenly over the layered potatoes and cheese.
    • Cover the pan tightly with aluminum foil or a lid if using a skillet.
    • Place the pan on the preheated smoker grate and smoke for 2 to 2.5 hours, or until the potatoes are tender and the cheese is bubbly and golden brown on top.

  5. Serve:

    • Carefully remove the smoked cheesy potatoes from the smoker.
    • Allow it to cool slightly before serving.
    • Garnish with chopped fresh chives or green onions if desired.
