Memphis Style Ribs

Smoked Ribs with Memphis Style Rub Recipe:

Ingredients:

- 2 racks of pork ribs
- 1/4 cup Pop Smoke Memphis Style Rub
- 2 tablespoons brown sugar
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1/2 teaspoon cayenne pepper (adjust to taste)
- 1/4 cup apple juice (for spritzing)


Instructions:

Prepare the Ribs:

Remove the membrane from the back of the ribs for better flavor penetration.
Rinse and pat the ribs dry with paper towels.

Apply the Rub:

In a bowl, mix the Pop Smoke rub with brown sugar, paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper to create your spice blend.

Generously coat both sides of the ribs with the spice rub, ensuring an even covering.


Preheat the Smoker:

Preheat your smoker to 225°F (107°C). Use hardwood chips or chunks for a smoky flavor (hickory, apple, or cherry wood work well).
Smoke the Ribs:

Place the ribs on the smoker grates, bone side down.

Maintain a consistent temperature and smoke the ribs for about 3 hours, spritzing with apple juice every 45 minutes to keep them moist.

Wrap in Foil (Optional):

After 3 hours, you can choose to wrap the ribs in aluminum foil to expedite the cooking process. Sprinkle a bit more rub before wrapping.

Finish Cooking:

Continue smoking or wrapped for an additional 2-3 hours until the ribs reach an internal temperature of 195-203°F (91-95°C) for tender results.

Rest and Serve:

Let the ribs rest for 15 minutes before slicing. This allows the juices to redistribute.
