Grilled Steak Directly on Lump Charcoal
Ingredients:
- 1 top sirloin steak (3/4 inch thick)
- Cracked black pepper
- Kosher salt
- Ground Pounder seasoning (or your favorite steak seasoning)
- Grill gloves
- Long tongs
- Chimney starter
- Hair dryer (optional)
- Dry Brine the Steak:
- Season the steak generously with cracked black pepper, kosher salt, and Ground Pounder seasoning.
- Place the seasoned steak on a plate and refrigerate for 48 hours.
- Prepare the Charcoal:
- Fill your chimney starter about 3/4 full with B&B Oak lump charcoal.
- Light the charcoal and allow it to heat up until the coals are glowing red hot.
- Set Up the Grill:
- Dump the hot coals into your grill and let them settle for about 5 minutes.
- Use a hair dryer to blow on the coals a few times to increase the heat and remove excess ash.
