Smash Taco Recipe on the Grill with Southwest Seasoning

Ingredients:

  • Ground Beef or Turkey: 1 lb
  • Southwest Seasoning: 2 tbsp (Shellback By Burn Pit BBQ)
  • Taco Shells: 8-10 small corn or flour tortillas
  • Olive Oil: 2 tbsp
  • Onion: 1 medium, finely chopped
  • Garlic: 2 cloves, minced
  • Bell Peppers: 1-2, diced (optional)
  • Cheese: 1 cup shredded cheddar or Mexican blend
  • Lettuce: 1 cup shredded
  • Tomatoes: 1 cup diced
  • Sour Cream: ½ cup
  • Cilantro: ¼ cup chopped (optional)
  • Lime: 1, cut into wedges

Instructions:

  1. Preheat the Grill:

    • Preheat your grill to medium-high heat.

  2. Prepare the Meat:

    • Place tortillas on a flat surface.

    • Spread the uncooked beef or turkey on the tortillas so they cover most of the area.

    • Season the meat again to your preference.

  4. Cook The Smash Tacos:

    • Heat your cast iron or flat top.

    • Place the tortillas, meat side down, directly on the grill for about 2-3 minutes per side, or until they are slightly charred and pliable. 

  5. Assemble the Tacos:

    • In a separate dish or cast iron, add the chopped onions and garlic, sauté until translucent.

    • Optionally, add diced bell peppers and cook until they soften.

    • Place a finished tortillas on a flat surface.

    • Spoon a generous amount of the cooked onions onto the center of the tortilla.

    • Top with shredded cheese while the meat is still hot so it melts slightly.

  6. Add Toppings:

    • Add shredded lettuce, diced tomatoes, sour cream, and cilantro.

  7. Serve:

    • Serve the tacos hot with lime wedges on the side for squeezing over the top.
