Green Jacket Chicken Skewers:

Ingredients:

  • 1.5 lbs chicken breasts, cut into chunks
  • 2 green bell peppers, cut into chunks
  • 1 large onion, cut into chunks
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Ground Pounder Garlic Seasoning To Taste
  • Wooden or metal skewers

Chimichurri Sauce:

Ingredients:

  • 1 cup fresh parsley, finely chopped
  • 4 cloves garlic, minced
  • 2 tablespoons fresh oregano leaves, chopped (or 1 tablespoon dried oregano)
  • 1/4 cup red wine vinegar
  • 1/2 cup extra-virgin olive oil
  • 1 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper to taste

Instructions:

In a bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, dried thyme, and Ground Pounder to create the marinade.


Place the chicken chunks in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it's evenly coated. Marinate in the refrigerator for at least 30 minutes, or ideally up to 4 hours.

Prepare the chimichurri sauce: 

  • In a bowl, combine the chopped parsley, minced garlic, and chopped oregano leaves.
  • Stir in the red wine vinegar and extra-virgin olive oil until well combined.
  • Add the red pepper flakes for heat and season with salt and pepper to taste.
  • Taste and adjust seasoning if needed, adding more salt, pepper, or red pepper flakes according to your preference.
  • Let the chimichurri sauce sit at room temperature for at least 15-20 minutes to allow the flavors to meld together before serving.

Preheat your grill to medium-high heat.

While the grill is heating, prepare the skewers by threading the marinated chicken, green bell peppers, and onion onto the skewers, alternating between ingredients.

Once the grill is hot, lightly oil the grates to prevent sticking. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and the veggies are tender and slightly charred.

Remove the skewers from the grill and let them rest for a few minutes before serving.
