Easy BBQ Chicken Pizza on the Grill or Smoker

Ingredients:

  • 1 pound pizza dough (store-bought or homemade)
  • 1 cup cooked chicken breast, shredded or chopped
  • 1/2 cup BBQ sauce (plus extra for drizzling)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1 small red onion, thinly sliced
  • 1/2 cup chopped fresh cilantro (optional)

Instructions:

1. Preheat the Grill or Smoker:

Grill: Preheat to medium-high heat (about 450°F/230°C).
Smoker: Preheat to 225°F/110°C with your choice of wood chips (we suggest apple, cherry, or pecan)

 

2. Prepare the Dough:

On a floured surface, roll out the pizza dough to your desired thickness.

Brush one side of the dough lightly with olive oil.

3. Grill the Dough:

Grill: Place the dough, oiled side down, directly on the grill grates. Cook for 2-3 minutes until grill marks appear and the dough firms up. Brush the top with olive oil, then flip and cook for another 2-3 minutes.

Smoker: Place the dough on a pizza stone or a sheet pan. Cook for 10-12 minutes until the dough firms up.

Sprinkle the mozzarella and cheddar cheeses on top.

Add the thinly sliced red onion.

5. Cook the Pizza:

Smoker: Close the smoker lid and cook for another 10-15 minutes until the cheese is melted and bubbly.
