Easy BBQ Chicken Pizza on the Grill or Smoker

Ingredients:

  • 1 pound pizza dough (store-bought or homemade)
  • 1 cup cooked chicken breast, shredded or chopped
  • 1/2 cup BBQ sauce (plus extra for drizzling)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1 small red onion, thinly sliced
  • 1/2 cup chopped fresh cilantro (optional)
  • Olive oil for brushing

Instructions:

1. Preheat the Grill or Smoker:

Grill: Preheat to medium-high heat (about 450°F/230°C).
Smoker: Preheat to 225°F/110°C with your choice of wood chips (we suggest apple, cherry, or pecan)

 

2. Prepare the Dough:

On a floured surface, roll out the pizza dough to your desired thickness.

Brush one side of the dough lightly with olive oil.

3. Grill the Dough:

Grill: Place the dough, oiled side down, directly on the grill grates. Cook for 2-3 minutes until grill marks appear and the dough firms up. Brush the top with olive oil, then flip and cook for another 2-3 minutes.

Smoker: Place the dough on a pizza stone or a sheet pan. Cook for 10-12 minutes until the dough firms up.

4. Add Toppings:

Spread a layer of BBQ sauce over the cooked dough.

Evenly distribute the shredded chicken over the sauce.

Sprinkle the mozzarella and cheddar cheeses on top.

Add the thinly sliced red onion.

5. Cook the Pizza:

Grill: Close the grill lid and cook for an additional 5-7 minutes until the cheese is melted and bubbly.

Smoker: Close the smoker lid and cook for another 10-15 minutes until the cheese is melted and bubbly.

Finish and Serve:

Remove the pizza from the grill or smoker.

Drizzle with extra BBQ sauce if desired.

Sprinkle with fresh cilantro if using.
