Easy Barbecue Popcorn

To say we are a little obsessed with barbecue would be an understatement!  We'll even barbecue our popcorn! 

This simple recipe is great for those fall days where you need a tasty snack while you are waiting for your other meats to come off the grill!

Easy Barbecue Popcorn


Makes about 6 cups


Ingredients:

3 tablespoons vegetable oil
¼ cup popcorn kernels
2 tablespoons unsalted butter
2 tablespoons Pop Smoke Memphis Style BBQ Rub

Directions:


In a large deep saucepan, put enough oil to form a ⅛-inch deep layer


Heat oil over medium-high heat until it ripples, about 2 minutes


Add the popcorn kernels, tightly cover the saucepan, and cook. Gently shake the pan until you hear the first pop. Increase the heat to high and continue until all the kernels are popped (the noise will stop)


Gently shake the pan throughout to make sure even popping


Transfer the popcorn to a serving bowl


Melt the butter in the saucepan and drizzle over the popcorn. Sprinkle the Pop Smoke rub all over the popcorn. Stir to mix


Serve!
