Campfire Chicken Nachos Recipe

Ingredients:
- 1 pound boneless, skinless chicken breasts, diced into bite-sized pieces
- 1 tablespoon olive oil
- 1 packet taco seasoning (or homemade seasoning mix)
- 1 bag of tortilla chips
- 1 cup shredded cheddar cheese
- 1 cup diced tomatoes
- 1/2 cup diced red onions
- 1/4 cup sliced black olives
- 1/4 cup chopped fresh cilantro
- 1 jalapeno, thinly sliced (optional for spice lovers)
- 1/4 cup sour cream (optional)
- Cooking spray or foil for the campfire grate

Instructions:

1. Prepare the Campfire:
- Choose a safe and suitable spot for the campfire. Ensure it's away from any overhanging branches or flammable materials.
- Build a medium-sized campfire and let it burn until you have a bed of hot coals.

2. Prepare the Chicken:
- In a large bowl, mix the diced chicken with olive oil and the taco seasoning until the chicken is evenly coated.
- If you're at home or have access to a kitchen, you can pre-cook the chicken in a skillet until it's fully cooked. Otherwise, you can cook it directly over the campfire.

3. Cooking the Chicken Over the Campfire:
- If you're cooking the chicken directly over the campfire, you can use a cast-iron skillet or a heavy-duty foil packet. Make sure to spray the foil with cooking spray to prevent sticking.
- Place the seasoned chicken in the skillet or foil packet.
- Cook the chicken over the hot coals, stirring occasionally, until it's cooked through and nicely browned. This should take around 10-15 minutes.

4. Assemble the Nachos:
- Once the chicken is cooked, remove it from the campfire and set it aside.
- On a heat-resistant surface, such as a large platter or a flat rock, spread out a layer of tortilla chips.

5. Add Toppings:
- Sprinkle the cooked chicken over the tortilla chips.
- Add shredded cheddar cheese, diced tomatoes, diced red onions, sliced black olives, and chopped cilantro on top of the chicken.
- If you like some heat, add thinly sliced jalapenos as well.

6. Heat the Nachos:
- To melt the cheese and warm up the nachos, you have a few options. You can place the platter of nachos directly on a campfire-safe grill grate above the hot coals. Alternatively, you can cover the platter with aluminum foil and place it on the grate to heat through.
- Keep a close eye on the nachos to ensure the cheese melts without burning the chips.

7. Serve:
- Once the cheese is melted, remove the nachos from the heat.
- Optional: Add dollops of sour cream on top of the nachos.
- Enjoy your delicious and flavorful campfire chicken nachos!

Note: Be cautious when handling hot cookware or foil over the campfire. Use heat-resistant gloves or tongs for safety. Additionally, you can customize this recipe with other toppings like guacamole, salsa, or jalapeno slices, based on your preferences.
