Here are the basics for a 3-2-1 Smoke (new recipe coming to our website soon!)
The numbers (3-2-1) represent the time in hours
3 hours smoked
2 hours wrapped in foil or butcher paper
1 hour smoked again unwrapped - with a sauce if you choose
Sometimes people will opt for a 4-1-1 or a 2-2-2 combo
It really comes down to your preference of smoke flavor and texture
The key is knowing the cooking order: smoke-wrap-smoke w/ sauce
